Kaoliang spirit brewing skills

Four wonderful and different types of intangible cultural heritages and handicrafts from Kaihua county – ranging from dance to beer – were recently recognized, according to local officials.

The county is located in Quzhou city in East China's Zhejiang province and officials said on Dec 18 that these fine examples of regional creativity were listed in the seventh batch of the Quzhou representative intangible cultural heritage items list.

When on the hunt for drinking sensations, Xibian township in Kaihua county is just the place to go to sample the results of its brewing. After 49 days of fermentation, Kaoliang spirit is distilled. This wonderful liquor is easy on the palate, aromatic to the nose and has a long aftertaste.

According to the records, there was a history of sorghum cultivation and making Kaoliang spirit before the Qing Dynasty (1644-1911).
