Rice-wine vinasse, cucumber and loach stew is a traditional dish in Yunhe county, Lishui, East China's Zhejiang province. The dish is made of loach from paddy fields in Yunhe terraced fields, a special kind of white cucumber and red yeast rice wine vinasse.

Not only does the dish taste good, but it also very nutritious.

Loach, known as "ginseng in water", is an ideal anti-cancer food due to its low fat content and low cholesterol. Vinasse is rich in amino acids, vitamins and proteins, while cucumber, according to Compendium of Materia Medica, a Chinese herbology volume, clears heat, quenches thirst and reduces swelling.
