Lishui's Yunhe organic fish offers delicious, unique dishes

The first organic fish flagship store in Yunhe county, Lishui, has introduced a premium fish meal of seven dishes made from seven parts of fish from Yunhe Lake.
What makes this unprecedented culinary experience more than just a cooking technique is that it shows the beauty of using the entire fish. Each part, including the fish head, back, belly, scales, meat, and skin, is prepared using different methods and flavors.
"We combined the unique qualities of Yunhe Lake's organic fish with traditional recipes from ancient cookbooks, integrating modern cooking techniques to develop the premium fish feast," said Wang Zufu, the manager of the flagship store.
One standout dish of the fish feast is the fish scale jelly and the intricate process involved. After removing the mucus from the fish scales, they are blanched to eliminate any fishy odor. The scales are then boiled to extract the gelatinous protein, seasoned to taste, and refrigerated until set, creating a unique and flavorful dish.
