Though Ou Cuisine, or dishes authentic to Wenzhou, is less known than the classic Eight Chinese Cuisines, it is still quite popular for its fresh and mild taste – being not spicy or salty at all.

In this episode, Iurii Gaidaienko, a Ukrainian scientist who specializes in electromechanical equipment and has been living in Wenzhou with his family for four years, will follow in the footsteps of master chefs and explore the essence of Ou Cuisine.

Pan Xiaolin, a national cooking expert, taught Gaidaienko how to make fish balls, the most popular Ou dish.

Wenzhou fish balls are shaped like corals and require the chef to cook the meat in a very specific way with different seasonings.

"I have loved the unique freshness of Ou Cuisine since childhood and I'm proud to promote the flavors of my hometown as an adult," Pan said.

As many Wenzhou natives live overseas, Ou Cuisine has developed into one of the city's main attractions.
