At the recent 3rd Rural Food Conference of Zhejiang Province held in Zhoushan, the 2024 list of the Top 10 Farmhouse Snacks of Zhejiang was unveiled, featuring a local delicacy from Wenzhou.
Taishun Guanyin Tofu
This unique tofu is made from the fresh leaves of Premna microphylla, a medicinal and edible plant documented in classical texts like Compendium of Materia Medica. The leaves are massaged in water to extract pectin, which is then coagulated with calcium powder to form the tofu.
Celebrated for its vibrant green color, tender texture, and natural herbal aroma, Guanyin Tofu is especially popular as a refreshing summer dish. Known as the "forest vegetable", it has been a staple in Taishun and surrounding areas for over 1,000 years and is deeply cherished by locals. It is an intangible cultural heritage item of Wenzhou and remains a beloved delicacy to this day.
