Yujiao

Yujiao, or taro dumpling, is a traditional snack in Shaoxing's Xinchang, where people seldom had fish in olden times since it is a mountainous county. The pronunciation of "yu" in "yujiao" is similar with the pinyin of fish, so local residents made some yujiao to wish for Niannian Youyu, or "Having a Surplus Every Year".

The food is made with taro dough shaped into dumplings, which are then stuffed with minced meat and vegetables before steaming. The dumplings taste tender and smooth and the soup has a refreshing and delicate taste.
