Sanzhenzhai: A time-honored brand in Jiaxing
Sanzhenzhai, a brand formed in Wuzhen, Jiaxing, East China's Zhejiang province, was recognized as a time-honored brand in China in 1993.
Established during the Daoguang period of the Qing Dynasty (1644-1911), the brand has a history of more than 160 years, and has explored a unique food processing technique by following the 1,000-year-old dining traditions of Wuzhen.
The pot-stewed meat and poultry of Sanzhenzhai feature high-quality ingredients, a sophisticated manufacturing process, and a unique flavor, and are popular in regions south of the Yangtze River.
In 2009, the Sanzhenzhai marinating technique was shortlisted as a representative of intangible cultural heritage items in Jiaxing.
Stewed duck in soy sauce is the time-honored brand's most famous product and features a bright color, a fat but not greasy flavor, and chewy meat.
The dish's bright color comes from simmering boiled duck with various seasonings, including high-quality soy sauce, white sugar, yellow rice wine, and aginomoto. When the water runs out, the coloring is finished.
The brand also established a museum in Wuzhen for its duck stewed in soy sauce, where visitors can learn about its history and witness the preparation process.
Meatballs, beggar's chicken, steamed chicken feet with soy sauce, and stewed beef with soy sauce are also popular among customers.
Sanzhenzhai's products are now available in Shanghai, Ningbo, Hangzhou, Wenzhou, Nanjing, and Wuxi, and some of them have been exported to the United States, South Korea, and Japan.
