Stewed pork bones with hard tofu is among the 100 most famous dishes in Jiaxing and is highly popular among locals, especially during cold winters.

Hard tofu is rich in nutrients as its lecithin can help prevent cardiovascular disease and protect the heart, its mineral substances can promote bone growth, and the ossein contained in pork bones is good for the skin and can improves one's constitution.

Main ingredients: One piece of hard tofu, 750 grams of pork bones

Seasoning: Chopped green onions, ginger, garlic, anise, myrcia, cardamun. Fifty g of thick broad-bean sauce, 50 g of soy bean sauce, 20 g of white sugar, 5 g of pepper, 20 g of hoisin sauce, and 5 g of chicken extract

Preparation: Soak the pork bones in water for half an hour after cutting them into smaller pieces and then boil the pork bones to remove the scum. Stir fry the chopped green onions, ginger, and garlic first, then add thick broad-bean sauce and continue stir frying, then add pork bones and and immerse them in water, and finally place all other seasonings into the pot. Let them boil on high heat and then simmer them for one hour. Next, add sliced hard tofu and simmer it for another one hour.
