Stir-fried shredded lean pork is a traditional delicacy in Xincheng, an ancient town in Jiaxing, and is popular in all local restaurants.
In old times, meat was a rare food in peoples' diets and a single meat dish was usually eaten several times, especially braised pork shank in brown sauce.
In order to make recooked pork shank more visually appealing, Xincheng's housewives added many ingredients to the dish. The dish eventually became popular among locals and gradually became a staple at local banquets.
Main ingredients: 250 grams of lean pork, 100 g of fat meat
Ingredients and seasoning: 50 g of winter bamboo shoots, 10 g of Chinese leek shoot, 4 g of salt, and 2 g of gourmet powder
Preparation: First boil the clean lean pork, leave it to simmer for three to four hours, then tear it into strips. Stir fry the pork strips with shredded winter bamboo shoots and fat meat as well as Chinese leek shoots, then add seasonings and a corn starch solution.
