Stewed duck in soy sauce is the most famous product of Jiaxing's time-honored brand Sanzhenzhai and features a bright color, a fat but not greasy flavor, and chewy meat.
The dish's bright color comes from simmering boiled duck with various seasonings, including high-quality soy sauce, white sugar, yellow rice wine, and aginomoto. When the water runs out, the coloring is finished.
Although seasonings are important for a delicious stewed duck, the raw material – duck – is also the key. Sanzhenzhai uses local-grown sheldrake featuring thick fat to retain the exquisite flavor.
The brand also established a museum in Wuzhen for its duck stewed in soy sauce, where visitors can learn about its history and witness the preparation process.
