Yellow rice cake, which is popular in southwest Zhejiang province, originated in Songyang county in Lishui.
To make yellow rice cake, people have to collect branches from the mountains and burn them to ashes. Then people put them into water, add polished round-grained rice until the rice turns yellow.
After that, they wash the rice and steam it, then put the rice into a stone mortar to mash the mixture into rolls. The rolls then are cut into smaller rolls and the cook will make them into long strip-shaped or round pieces before they become cold.
The yellow rice cake gives a refreshing and soft taste. If fried with preserved meat, vegetables and winter bamboo shoots until they turn yellow, the rice cake will be even tastier.
