Zhejiang company supplies a third of the world's caviar
In East China's Zhejiang province, one company fuels the world's appetite for caviar.
Kaluga Queen, headquartered in Quzhou, operates the world's largest sturgeon farming and processing base and produces nearly 35 percent of the global supply under its flagship brand, Kaluga Queen, exporting to 46 countries and regions.
At the world's largest sturgeon farm, the sound of water is constant. Over 100,000 fish swim in giant circular tanks fed by cold water from the Wuxi River. Oxygen machines roar. It's here that top-grade caviar begins.
Inside the plant, speed and precision take over. Eggs are harvested, sifted, salted, and packed — 16 steps in just 15 minutes. From fish to fork, the journey can take as little as 48 hours.
Kaluga Queen runs the full cycle: from breeding to processing, all backed by its own tech. In its lab, new products are in the works — beef-like sturgeon slices, collagen drinks for older customers, and caviar ready for 100 different recipes.
In 2024, Kaluga Queen produced over 260 metric tons of caviar, exporting more than 220 tons — about 80 percent of China's total and a third of the world's supply.
